Let’s talk about elderflower champagne, a sparkling summer drink made from one of the most eagerly awaited wildflowers of the year. Elderflowers are only in season for a few short weeks, so when they bloom, you have to be quick to collect them. I’ve been looking at different home fermentation recipes and after 2 successful batches, I can now recommend the following recipe. It yields about 12 litres of refreshing elderflower champagne and requires little more than a fermentation vessel and some swing-top bottles. Best served on ice.

What you’ll need
Nothing too special here, just the standard components for a good floral infusion and a healthy fermentation:
- Elderflower: Roughly 35-40 heads (around 230g)
- Sugar: 2.4 KG
- Lemons: 3 big ones
- Wine Yeast: 1 sachet
- Water: 12 litres total

The Process
1. Prepping the Flowers First, cut the flower heads into small branches. You want to leave as little of the green stems as possible. The green parts carry bitter alkaloid compounds that will throw off the final taste. It is a bit tedious, but keeping the inputs clean gives you a much better product in the end.
2. The Sugar Solution Get your 15-litre fermenting bucket ready. We need to dissolve our 2.4 KG of sugar. Trying to dissolve that much sugar in cold water is a slow, frustrating process, to speed it up dissolve it in 6 litres of warm water first (half your total amount). Stir until it is completely dissolved and the liquid is clear. Then, pour in the remaining 6 litres of cold water. This brings the overall temperature down quickly. You never want to pitch your yeast into hot water; the thermal shock will kill them off immediately.
3. Flavor and Inoculation Cut the lemons into quarter wedges, squeeze the juice straight into the bucket, and then just drop the squeezed lemons in there as well. They add a great fragrance from the essential oils in the peel. Add all your prepared elderflowers and give it a really good stir to combine.
A quick practical tip: If the flowers and lemons are floating too much at the surface, use a clean water bag to weigh the contents down. You want everything submerged so it actually infuses into the solution. Add your sachet of wine yeast.
4. Main Fermentation After those first couple of nights, filter out the flowers and the lemons. You don’t want organic matter degrading in the brew for weeks. Now, just leave the mixture to ferment until it finishes.
The recipe notes this takes around 2-3 weeks “depending on the weather.” If your room is warmer, the yeast works faster; if it’s colder, the kinetics slow down. Try to keep it in a spot with a relatively stable temperature, ideally 20 – 22 °C.

5. Bottling and Carbonation
Once the fermentation is finished, bottle the champagne into cap-lock bottles. To get that nice fizz, you need to bottle-condition it. Add a tiny bit of a sugar-water mixture to each bottle before sealing. The residual yeast will consume this new sugar and produce a little more CO2. Because the bottle is sealed, the gas has nowhere to go, so it dissolves into the liquid and gives you carbonation.
